There are so many great things about summer time. Between the warm weather, time spent beaching it up and all the great fruits and vegetables, there is really nothing better. One of the best things: fresh, ripe berries. We love berries so plump, the juices run down your chin with every bite. They just scream to be used in so many ways. One tasty way is the blueberry mojito. A violent shock of blueberry simple syrup is mixed with some fresh mint and a healthy splash of rum to make a grown-up cocktail perfect for the summer season.
Ingredients
For blueberry simple syrup:
1 cup sugar
1 cup blueberries
1 cup water
For mojito:
2 ounces blueberry simple syrup
2 ounces white rum
4 ounces lemon-lime soda
2 sprigs of mint
Juice of ½ lime
Directions
For simple syrup, combine all in a sauce pan and ing to a boil. Reduce and simmer for five minutes. Strain.
To make mojitos, combine mint and lime and muddle. Pour into two ice-filled glasses. Combine syrup and rum in a shaker and shake until well mixed. Pour into the glasses. Top with lemon-lime soda.
