This time of year is rife with football parties and you know what that means. Food, food and more food. Maybe some drinks here and there. But sometimes, you want to put a new spin on classic foods. For this year's Super Bowl, try throwing a meatless party. There are a wide array of dishes that are hearty and filling without being meaty. Buffalo cauliflower bites are just one of those dishes. They taste exactly like buffalo wings only healthier and, dare we say, better?br
Ingredients
1 medium head of cauliflower, chopped into florets
1 cup water
1 cup white whole wheat flour
1 Tbsp. garlic powder
1 tsp. paprika
1 tsp. onion powder
1 Tbsp. butter, melted
3/4 cup buffalo sauce
Directions
Preheat the oven to 450 degrees and line a baking sheet with aluminum foil. Spray it with non-stick spray. In a large bowl, combine flour, spices and water until completely mixed. Toss in the cauliflower and stir it well, making sure to coat the cauliflower. Place the florets on to the baking sheet and bake for 20 minutes. Mix melted butter and buffalo sauce until completely combined. Remove cauliflower from the baking sheet and place in a large bowl. Pour buffalo sauce over and toss well to coat. Place the florets back onto a baking sheet and bake for an additional seven minutes. Serve with blue cheese dressing, if you choose.
Makes approximately 2 cups of cauliflower bites
