brElevate that old sautéed spinach and mushroom routine with this fantastic recipe. This simple side is a real treat, both in flavor and it’s 12-minute prep time. Butter, garlic, mirin, chicken stock and salt and pepper come together for a savory, yet slightly sweet sauce for button mushrooms. These are so good and so easy to make I plan to have mushrooms on hand at all times so I can whip them up whenever the mood strikes. Don’t worry if you don’t have any chicken stock, I use chicken broth and it was still out of this world!
Ingredients – Serves 4
Directions
1. Melt butter in a large skillet over medium heat. Add halved button mushrooms and minced garlic; cook 3 minutes or until mushrooms release their liquid. Add chicken stock and mirin; cook 2 minutes or until liquid is syrupy. Sprinkle with salt and pepper.
