Onion dip is a tradition for most parties but the old version, made with some soup mix and a tub of sour cream, is old and tired. Instead, caramelize your onions for a new take on an old classic.
Ingredients
2 medium yellow onions, sliced into rings
1 tsp. butter
2 tsp. vegetable oil
1 cup vegetable stock
salt and pepper
1/2 cup Greek yogurt
1/2 cup light mayonnaise
Directions
Heat butter and vegetable oil in a sauce pan over medium heat. Add in onions and stir, tossing to coat. Season with salt and pepper. Allow the onions to cook until translucent, approximately 3 to 4 minutes. Add in 1/4 cup of vegetable stock, stir and cover, cooking for 5 to 7 minutes. The stock should be absorbed. Add in another 1/4 cup of stock and repeat until all stock is gone and the onions are thoroughly caramelized and reduced in size. Remove the onions to a large bowl. Stir in Greek yogurt and mayonnaise and stir well to combine. Season with additional salt and pepper. Serve with chips or pita slices.
Makes approximately 1 to 1 1/2 cups dip
