Breakfast in bed is a parental holiday staple. When the kiddies are little, it consists of bread and butter and some leftover coffee, since that is all little hands can manage. But a grown-up version of breakfast in bed should feature cheesy bacon hashbrown casserole. It contains all the elements of a great dish, from cheese to salty bacon to rich potatoes. Ingredients
1/2 lb bacon
4 Yukon gold potatoes, sliced into sticks
1 yellow onion, diced
1 cup Monterey jack cheese
Salt and pepper to taste
Directions
Preheat oven to 375 degrees. Fry the bacon in a skillet until crisp. Remove to a paper towel lined plate. Drain all but 1 tablespoon of the grease. Add the onion and cook until translucent. Add in the potatoes and bacon and stir well to combine. Cook for ten minutes until the potatoes begin to soften. Stir in the cheese then place the pan in the oven for 15 minutes until cooked through.
