- 2 boneless, skinless chicken breasts r
- 1 avocado r
- 8 sliced thick-cut, hearty bread, such as Ciabatta r
- 2-3 chipotle peppers, canned in Adobo sauce, deseeded and chopped r
- 3 tablespoons mayonnaise r
- 2 clove garlic, minced r
- 1 tablespoon adobo sauce (from canned peppers) r
- 1 lime r
- 8 ounces cheddar cheese r
- Olive oil r
Combine the chicken with the garlic, adobo sauce, and the juice of one lime in a large bowl. Make sure the chicken is coated, and then let it marinate for at least 30 minutes.
rPreheat the oven to 350 degrees and bake the marinated chicken until it’s no longer pink inside. Slice the chicken thinly, and then begin to assemble the sandwich.
rSpread mayonnaise on each slice of bread. Thinly slice the avocado, and then layer it on top of the bread, evenly dividing it between four pieces of bread. Top with the chipotle peppers, the chicken, and 2 ounces of cheddar cheese. Place the second slice of bread on top. Brush each outer side of the bread with olive oil.
rPreheat the panini press or grill pan to 375 degrees. Place the sandwiches on the press and cook until the bread is golden and the cheese is melted; it will take approximately four minutes. Repeat with remaining sandwiches.
