If there is one treat hard to resist, it has to be cookies. Sure, summer is meant for ice cream and winter is usually about the spicy, warm treats. But cookies? Well, they are meant to be eaten year-round. Of course, those of us who may be trying to eat well consider avoiding sweets all together. Slice and bake cookies are perfect, however, for just that reason. You can easily whip up a big batch of them and freeze the dough. When you want just a few, slice them off and bake just how many you want. The temptation to eat a dozen in one sitting will never even present itself. With all the flavor of a traditional cinnamon roll, these cookies are a perfect example.
Ingredients
½ cup powdered sugar
¾ cup butter, softened
½ tsp. salt
1 ½ cups flour
1 Tbsp. melted butter
¼ cup white sugar
1 ½ tsp. cinnamon
Directions
Cream sugar, butter and salt until light and fluffy. Slowly add in flour until a dough forms. Turn the dough onto a floured surface and roll it out into a rectangle. In a small bowl, mix together white sugar and cinnamon. Pour the melted butter on top of the dough then sprinkle the sugar evenly on the surface. Spread it out to cover the entire dough. Slowly roll the dough into a log then wrap it in plastic wrap. Store in the fridge or freezer until ready to use.
To bake, slice the cookies into ¼ inch to ½ slices. Bake at 350 degrees on a parchment-lined baking sheet for 10 to 12 minutes.
