Pancakes are definitely a must for any traditional breakfast. We love using buttermilk in ours. It gives them a great taste and nice, fluffy texture. br
Ingredients
3 cups all-purpose flour
2 Tbsp. white sugar
2 tsp. baking powder
1 1/2 tsp. baking soda
3/4 tsp. salt
3 cups buttermilk
1/2 cup milk
3 eggs
1/3 cup butter, melted and cooled
Directions
In a large bowl, combine flour, sugar, baking powder, baking soda and salt. In another bowl, beat together buttermilk, milk, eggs and butter. Form a well in the center of the dry ingredients and add the wet to the well. Stir to just combine. Heat a griddle over medium heat. Place a pat of butter on it and let it melt across the griddle. Pour batter onto the griddle, using 1/3 cup for each pancake. Cook until bubbles begin to form on the pancake, then gently flip. Cook for one to two additional minutes then transfer to a serving plate.
Makes 12 pancakes.
