Every farm stand and market has corn on the cob during the summer months. It’s so sweet and crunchy, perfect for the season. Fritters are an ideal choice for a party. Simple to make, tiny enough to be an excellent appetizer but big on delicious flavors.
Ingredients
1 cup all-purpose flour
1 tsp. baking powder
3 ears of corn, kernels cut from the cob
2 eggs, separated
½ cup heavy cream
Salt and pepper
Oil for frying
Directions
Whisk flour and baking powder into a bowl and mix in corn. Whisk egg yolks with cream in a small bowl and stir it into the corn mixture. Season with salt and pepper. Beat egg whites with a mixture until stiff peaks form. Gently fold into the corn batter. Pour vegetable oil into a heavy skillet, about 2 inches. Heat to 375 degrees. Drop fritters, about 2 tablespoons at a time, into the oil. Cook until golden own, 2 to 3 minutes per side. Remove to a paper towel-lined plate.
