Maryland natives never want for crab in all its renditions. And crab nachos are certainly not unheard of here in the crab state. But the real kicker here is the Old Bay queso. Made with Flying Dog's Dead Rise Old Bay beer, it has a kick of flavor unlike other queso.
Ingredients
For queso:
3 Tbsp. butter
3 Tbsp. flour
½ cup milk
½ tsp. cayenne
½ tsp. salt
½ cup Dead Rise beer
2 Tbsp. green chiles
4 ounces cheddar cheese, grated
Directions
Melt the butter in a sauce pan over medium heat. Once fully melted, add in the flour and whisk well until combined. Pour in the milk slowly, whisking to fully incorporate. Once milk is fully incorporated, add in the beer and whisk until fully combined. Stir in the cayenne, salt and green chiles until fully mixed. Add in the cheese and whisk until fully melted and combined. Remove from heat and set aside.
Ingredients
For nachos:
4 tortillas, chopped into triangles
4 to 6 ounces jumbo lump crab meat
1 recipe of queso
Directions
Preheat oven to 375 degrees. Place tortilla triangles onto a foil-lined baking sheet and bake for 15 minutes until golden and crisp. Allow to cool slightly. Once cool enough to handle, place the tortillas on a place. Top with crab meat then pour a bit of queso on top. Depending on how cheesy you like your nachos, you may or may not use the entire recipe.
