This Halloween give your sweet tooth something to really cele ate with a smoothie that’s as sweet as candy, but without all the refined sugar! Pecans, Medjool dates, pear, almond milk, cacao nibs, lucuma powder, and maca powder will leave you feeling like you can take on a whole city of trick-or-treaters. Lucuma powder can be pretty pricey, but it’s got a boatload of health benefits and you can snag it on sale at Whole Foods if you hurry! Unfortunately, there isn’t much help with the sky-high price of maca powder. A small bag will run you a pretty penny, but think of it as an investment. You can find Medjool dates in the pre-cut fruit section or dried Medjool dates in the bulk section right before the seafood department of Whole Foods. Don't forget to removes the pits like me, or you'll have a noisy waste of your first smoothie!
Ingredients – Makes 2 14-ounce servings
- ¼ cup raw pecans
- ¼ cups Medjool dates, pitted (about 3-4 large fruits)
- 1 cup chopped very ripe pear
- 2 tablespoons lucuma powder
- 1 teaspoon maca powder
- 1 ½ cups almond milk
- 2 tablespoons cacao nibs
- 2 cups ice
Directions
1. Blend together all the ingredients, except the cacao nibs and coconut ice, until creamy and smooth. Add the nibs and ice and blend until frosty, leaving the nibs to serve as the “chocolate chips” and add a crunchy kick. It is unlikely you will need to boost the sweetness, but add if desired.
