Watermelon-Lime Soda
Make this refreshing concoction in just 22 minutes or less! Pureed watermelon is ightened with fresh lime juice, while ginger-infused simple syrups adds a little zing. The mixture is topped off with club soda for the perfect summertime sensation!

- Ingredients – Serves 6
- ¾ cup sugar
- ½ cup water
- ¼ cup chopped peeled fresh ginger
- 10 cups diced watermelon
- ¾ cup fresh lime juice
- 4 cups chilled club soda
- Ice sprigs
- Mint Sprigs
Directions
- Combine sugar, water, and ginger in a small saucepan over high heat. Cook until sugar dissolves, stirring with a whisk. Remove from heat; cover and let stand 15 minutes. Strain; discard solids. Working in batches, place diced watermelon and fresh lime juice in a blender; process until smooth. Strain watermelon mixture through a fine sieve into a pitcher; discard solids. Stir in sugar syrup and chilled club soda. Serve over ice; garnish with mint sprigs.
