Beans and rice make a great meal option, any time or any place. Inexpensive and quick, you can dress them up any way you want, with any flavors or additives. We used some summer corn, a little red onion and some smoked paprika for a great kick. br
Ingredients
2 cups own rice
1 tbsp. butter
1 can black beans, drained and rinsed
2 cobs of corn, kernels cut off
½ red onion, diced
1 can diced tomatoes
2 tsp. smoked paprika
1 tsp. garlic powder
½ tsp. cayenne pepper
Salt and pepper to taste
Directions
Cook rice in a rice cooker or according to package instructions. While the rice cooks, begin cooking the rest of your filling. Heat the butter over medium high and add in the corn and onions. Cook until somewhat soft, about 2 minutes. Add in the beans and tomatoes and stir well. Add in the spices and mix until combined. Once the rice is finished, add the rice in and mix well until well combined. Season with salt and pepper.
Makes about 3 to 4 cups rice
