These layered Mexican dip cups are typically a hit since they are so easy to transport. A perfect one-handed appetizer, you don't have to put down your cocktail to indulge.
Ingredients
1 can black beans, drained and rinsed
4 Tbsp. salsa, divided
2 Tbsp. guacamole
2 Tbsp. Greek yogurt
2 ounces shredded cheddar cheese
Directions
In the bowl of a food processor, combine black beans and two tablespoons salsa. Pulse until somewhat smooth. Line up two clear plastic glasses. Layer two tablespoons of bean mixture at the bottom of each glass. Repeat the process, spooning on remaining two tablespoons of salsa, guacamole and Greek yogurt. Top each with shredded cheese. Garnish with a jalapeno or two if you choose. Serve with tortilla chips.
