Thumbprint cookies are pretty classic. This version, however, takes it a step further. These put a little spicy ginger jam in the center for a serious flavor twist. br
Ingredients
2 cups flour
1 1/2 tsp. cinnamon
1/4 tsp. salt
1 cup butter, softened
1/2 cup sugar
1 Tbsp. molasses
2 egg yolks
1 tsp. vanilla
ginger jam (this can be found in a specialty store such as Homegoods or Marshall’s)
Directions
Preheat oven to 350 degrees and line baking sheets with parchment paper. Cream butter and sugar until light and fluffy. Add in egg yolks and vanilla and mix well. Add in molasses and stir well. In a separate bowl, combine flour, cinnamon and salt. Slowly add flour mixture to the mixing bowl, stirring until fully combined. Scoop the dough in rounded tablespoons onto your baking sheet. Using your thumb or a wine cork, press circles into the middle of each cookie. Fill with jam. Bake for 10 to 12 minutes until they turn golden. Cool on a wire baking rack.
Makes approximately 30 cookies.
