Whenever a recipe includes lemon, it is sure to have a brightness, a freshness. These cookies, sandwiched with four berry jam, are the ultimate in sandwich cookie. br
Ingredients
1 cup butter, softened
1/2 cup sugar
1 Tbsp. lemon zest
2 1/2 cups flour
approximately 6 Tbsp. jam of your choice (we used Bonne Maman four berry preserves)
Directions
Preheat oven to 325 degrees. Line baking sheets with parchment paper. In the bowl of a stand mixer, cream butter and sugar until well-blended. Add in lemon zest and mix to combine. Add in flour and mix until fully-combined. Transfer dough to a lightly-floured surface. Roll it out until it is approximately 1/2 thick. Use the cookie cutter of your choice and cut cookies out of the dough, re-rolling and cutting as necessary. Place the cut cookies on the baking sheet and bake for 20 to 25 minutes until the edges begin to own. Transfer to a wire rack to cool. Once cool, place approximately 1 tsp. of jam in the middle of the cookies, then place a cookie on top to sandwich.
Makes approximately 20 sandwiches
