White bean dip is a nice option since it has so many different uses. Dunk some tortillas in, spread a little onto a cracker or toss it on a sandwich for an extra zing. br
Ingredients
1 can white beans, drained and rinsed
2 cloves garlic
juice of 1/2 lemon
1/3 cup olive oil
dried parsley, dried onion, salt, pepper
Directions
In the bowl of a food processor, combine beans, garlic, lemon juice and olive oil. Set to high and process until the dip is smooth and creamy. Spoon into a bowl. Top with a pinch of parsley, onion, salt and pepper.
Makes approximately 1 1/2 cups
