Ingredients

2 cups mashed potatoes
1 large egg, beaten
6 tablespoons all-purpose flour
1 ½ tablespoons onion, grated
2 tablespoons fresh dill, chopped
Salt and pepper
Vegetable oil, for frying

Directions

Combine the potatoes and egg in a medium-sized bowl. Mix in the flour, onion, dill, salt and pepper.

Heat 1/8-inch oil in a large skillet over medium-high heat. Scoop heaping tablespoons of the potatoes into the pan, flattening them slightly with the back of a spoon, and fry them until they are golden own on each side. Transfer to paper towels to drain.

To make the dill sauce, combine ½ cup sour cream, 1 ½ tablespoons Dijon mustard, 1 tablespoon lemon juice, and 2 teaspoons chopped fresh dill. Serve with the latkes.
