Sometimes, there may not be a ton of time for a big, lavish breakfast on Christmas morning. These scones can be made the night before to save time. And they’re also great if you have a Christmas morning road trip to grandma’s house. br
Ingredients
3/4 cup buttermilk
1/4 cup sugar
2 tsp. vanilla
1 large egg
2 cups all-purpose flour
1 Tbsp. baking powder
3 Tbsp cold butter, cut into cubes
3/4 cup chocolate chips
Directions
Preheat oven to 375 degrees. Line a baking sheet with parchment paper. Combine first four ingredients in a bowl and whisk. In a food processor, combine flour and baking powder and pulse to combine. Add in the butter and pulse until the mixture resembles coarse crumbs. Remove to a bowl and fold in chocolate chips. Stir in wet mixture until just moist. Turn the dough on a floured surface and knead then flatten into a large rectangle, approximately 1/2 to 3/4 inch thick. Use a cutter to cut 20 squares out of the dough. Place each square onto your baking sheet and bake for 16 minutes until golden.
Makes 20 scones.
