
It is peach season and these home grown stone fruits are the juiciest and, in my humble opinion, the best fruit to enjoy while going into Labor Day Weekend. Peaches can be added to anything from cereal to a scoop of vanilla ice cream. Start and end your day with locally grown peaches.

5-Minute Healthy Peach Frozen Yogurt (Justataste.com)
- 4 cups fresh Peaches, frozen solid
- 3 tablespoons Agave Nectar or Honey
- 1/2 cup plain Yogurt
- 1 tablespoon fresh Lemon Juice
- Add the frozen peaches, agave nectar (or honey), yogurt and lemon juice to the bowl of a food processor. Process until creamy, about 5 minutes.
- Serve the frozen yogurt immediately or transfer it to an airtight container and store it in the freezer for up to 1 month.
Healthy Peach Crisp (Eatingbirdfood.com)
- 4 cups sliced Peaches, about 6 peaches
- 1 tablespoon Arrowroot powder (cornstarch also works)
- t tablespoon Fresh Lemon Juice
- 1 cup Old Fashioned Rolled Oats
- 1/2 cup chopped Pecans or Almonds
- 1/2 cup Almond Flour or Almond Meal
- 1/3 cup Maple Syrup
- 1/4 cup melted Coconut Oil
- 1 teaspoon Vanilla
- 1/2 teaspoon Cinnamon
- 1/4 teaspoon Sea Salt
- Preheat the oven to 375°F.
- Spray an 8-inch square baking dish with cooking spray.
- Add peaches to the dish and combine with arrowroot and lemon juice. Set aside. You can also mix the peaches in a bowl if that's easier.
- In a medium bowl, stir together oats, pecans, almond flour, maple syrup, coconut oil, vanilla, cinnamon and sea salt.
- Once combined, spoon oatmeal pecan topping over the peaches. Gently press the mixture down using the back of the spoon.
- Bake for 30 minutes or until fruit is bubbling and tender or until topping has hardened and turned a lovely golden brown color.
Peach Cobbler Overnight Oats (Evolvingtable.com)
- 1/2 cup Pecans, coarsely chopped
- 2 cups fresh peeled Peaches, finely diced
- 1/4 cup Honey
- 1 teaspoon Lemon Juice
- 3/8 teaspoon Cinnamon
- 1/8 teaspoon Nutmeg
- 2 cups Oats
- 2 cups Milk
- 1 teaspoon Vanilla
- 5 oz container of yogurt, plain or vanilla
- Toast pecans in a large skillet or sauce pan over medium-low heat for 4-5 minutes. Set aside.
- Add peeled and diced peaches to the saucepan over medium heat along with 1 tablespoon of honey and ¼ teaspoon cinnamon.
- Saute for 4-5 minutes or until peaches are tender.
- Turn off heat and stir in lemon juice.
- Mix together oats, milk, 1 teaspoon vanilla, and ⅛ teaspoon of cinnamon and nutmeg in a large bowl.
- Divide the oats evenly between four jars.
- Add a little more than 1 ounce of yogurt to each jar.
- Distribute equal amounts of the peach mixture to each jar.
- Refrigerate for at least 2 hours or up to overnight before serving with toasted pecans.
