Oatmeal Chocolate Chip1/2 cup butter, softened
1 avocado peeled and mashed
1/2 cup brown sugar
1/2 cup white sugar
1 egg
1 teaspoon vanilla
1 cup flour
1 teaspoon baking soda
1/2 teaspoon salt
2 cups rolled oats (not quick cooking)
1 bag Hershey’s Semi-Sweet Chocolate Chips
1/2 cup shredded coconut
1/2 cup chopped walnuts
Preheat oven to 350 degrees and line cookie sheets with parchment paper. Beat butter until smooth, add in brown and white sugar and beat for at least 2 minutes until light and fluffy. Gently fold in avocado. Add egg and vanilla. Mix thoroughly. Sift flour, baking soda, and salt in a separate bowl and add to butter mixture and mix well. Stir in oats and coconut. Fold in chocolate chips and walnuts. Drop by spoonful, onto parchment lined sheets. Bake 10-11 minutes until lightly golden. These are ready right out of the oven, or cooled or even frozen. My family eats them all three ways. As for the avocado—yes you read that correctly. You will never know it is in there and everyone will be shocked to find out it is an ingredient.
