Want a satisfying, guilt-free bite without the hassle? I don’t know about you, but I tend to pack way too much into my day and sometimes feeding myself (properly) falls by the way side. Fortunately, I have just the tasty little morsel to give your tummy the hug and your energy level the boost it needs. Maybe you have leftover ‘maters from this week’s chicken and tomato salad dish or maybe your neighbor happened to leave a bag of tomatoes from her garden on your door (I just love my neighbors). Any reason is a great reason to give this a try! Personally, I’m all in whenever there’s cheese involved.
Ingredients
- Handful of tomatoes of your choosing
- Goat cheese crumbles
- Fresh herbs such as chives, basil, or parsley
- Freshly ground pepper
Directions
1. Cut the tomatoes in half
2. Top tomatoes with goat cheese crumbles
3. Sprinkle with herbs and crack pepper on top
