It’s not really brunch without some sort of quiche, right? But if you are hosting, chances are you don’t want to spend all of your time in the kitchen. Instead, skip the crust and serve this quiche. It’s filling and hearty enough to make up for the lack of crust. br
Ingredients
3 eggs
3 egg whites
1 Tbsp. butter
2 cloves garlic
½ yellow onion, diced
1 cup cheddar cheese, shredded
Salt and pepper to taste
Directions
Preheat oven to 400 degrees. Spray a pie plate with non-stick spray. Melt butter in a sauce pan over medium high. Add in onion and sauté until soft, about 3 minutes. Add in spinach and sauté until wilted. Remove from heat and set aside. In a large bowl, combine eggs and egg whites. Stir in spinach and onion mixture and cheese and mix until thoroughly combined. Sprinkle with salt and pepper. Pour into the pie plate and bake 25 to 30 minutes until cooked through and golden. Slice into 8 wedges.
