- • 1 sweet potato, baked or microwaved until soft r
- • 3 cup whole-wheat macaroni r
- • 4 tablespoons butter r
- • 2 tablespoons flour r
- • 2 cups milk r
- • 1 cup cheddar cheese, grated r
- • 1/2 cup Parmesan cheese, grated r
- • Salt and pepper to taste r
Directions
rSlice open the sweet potato and scoop out the flesh into a food processor. Add a splash of water and puree until smooth. Measure out one cup.
rPreheat the oven to 350 degrees.
rMelt the butter in a heavy skillet over medium-low heat. Whisk the flour into the butter and cook for one minute, stirring constantly. Add the milk slowly, continuing to stir. Once all the milk is incorporated, add the cheddar cheese. Mix as the cheese melts, and then stir in the sweet potato puree. Taste the sauce and season if necessary.
rAdd the pasta to the sauce and combine thoroughly. Spoon into the prepared baking vessel of your cheese, whether it's a large casserole dish or individual ramekins. Sprinkle with Parmesan cheese.
rBake for 25 minutes or until the Parmesan cheese has melted and browned.
