Ingredients
1 large zucchini
1 large yellow squash
3 Tablespoons butter
1 Tablespoon feta cheese, crumbled
Directions
Using a mandoline, slice your squash and zucchini into thin ribbons. Set aside. Melt butter in a sauce pan over medium high heat. Allow butter to continue to melt until own bits show on the bottom. Stir once, then let melt for another minute until the butter is golden in color. Add vegetables to the butter. Stir the vegetables, coating them in the butter. Allow them to cook until they have softened, approximately 2 minutes. Remove from the pan and place on your serving plate. Sprinkle with crumbled feta.
