Chorizo is a great, flavorful meat that can be used in lots of different ways. One of our favorites: the chorizo quesadilla. A little spice and a little cheese never hurt anyone.
Ingredients
2 chorizo sausages, removed from casing
1 Tbsp. olive oil
1 cup cheddar cheese
2 tortillas
Directions
Heat olive oil in a medium sized sauce pan over medium high heat. Once the oil heats up, add the chorizo. Cook the chorizo until owned and cooked throughout. Remove from pan and set aside. Heat up your panini press (or sauce pan). While the pan or press heats, assemble your quesadilla. Lay your tortilla flat. Add ½ cup cheese and some chorizo on one side of the quesadilla. Fold over. Repeat with the second tortilla. Place quesadilla on the panini press and close. Cook until cheese is melted throughout and quesadilla is crispy.
