I mixed in mini semi-sweet chocolate chips and topped the loaves with red, green and snowflake sprinkles right before popping them into the oven. Other great variations include walnuts, white chocolate chips, cranberries, and other dried fruits.r
Chocolate Chip Holiday Biscotti
Ingredients
4 eggs
1 cup oil
1 cup sugar
2 tsp almond extract
2 tsp vanilla extract
3 cups flour
1 tbsp baking powder
½ tsp salt
Mini semi-sweet chocolate chips
Sprinkles (red and green or holiday themed)
Preheat your oven to 350 degrees F.
Beat together the eggs, oil, and sugar. Add in the almond and vanilla extracts. Stir in the flour, baking powder, salt, and chocolate chips.
The dough will be difficult to spread, refrigerate for an hour to make it easier to handle. Divide the dough into 4 equal portions and use 2 baking sheets. It's not necessary to use cooking spray.
Shape dough into loaves (2 on each pan). Top with holiday themed sprinkles.

Bake for 20 minutes. Remove from the oven and slice when loaves have lightly cooled. Flip slices on their sides and put back in the oven for 15 minutes. Remove, let cool and enjoy!
