Rhea's Rundown
This dessert is so light and delicious; it’s the perfect way to end Mother’s Day unch. A classic combination of fluffy, homemade whipped cream and lightly sugared strawberries is a 15-minute treat everyone will love. The recipe calls for meringue cookies, but I used vanilla short ead cookies (from Whole Foods) instead, for more of a strawberry shortcake type confection.
Ingredients – Makes
- 2 cups strawberries, trimmed and sliced
- 2 teaspoons sugar
- 2 cups heavy cream
- 10 small meringue cookies, roughly crushed
Directions
1. Combine the strawberries and sugar in a small bowl. Let stand for 10 minutes. Meanwhile, whip the cream in a large bowl until stiff peaks form. Fold two-thirds of the crushed meringues and half of the strawberries into the cream. Spoon the mixture into four cups. Top each cup with the remaining strawberries and meringues and serve immediately
