Tell us a little bit about the restaurant.
We are a casual dining, friendly Italian restaurant. A family place where you can ing the kids and enjoy being here. We do a lot of catering and we also do carry out. Sometimes we do catering for the schools; different groups will come in as well.
How did you get started in the restaurant business?
I started working with my uncle and his partner. Eventually, I became the manager and then bought my own location in 2007. I've been in the restaurant business for 13 years.
What is Bella Sera's philosophy on food?
Treat guests like family, serve great food, and always exceed expectations. Our goal is to be the best Italian restaurant. We are a quality-driven restaurant, not a quantity-driven one.
How often do you add new dishes to your menu?
We have weekly specials and change those about every 10 days. If it is popular, we'll leave it [on the menu]. We are looking at a new menu for the summertime.
What is your favorite kitchen utensil?
They are all the same for me. I love the kitchen, I love to create, and I love to cook.
If you knew the world would end tomorrow and you had to choose a last meal, what would it be?
I love pizza. I eat pizza every day, sometimes in the morning and evening. And I love pasta. But my last meal would be chicken Napolitano—chicken cut into cubes, tossed with penne pasta, garlic, oil, and light marinara, and topped with parmigiana cheese.
RECIPE
SHRIMP BRUSCHETTA { One serving }
For ead:
1 slice toasted Italian ead
olive oil
garlic clove
Brush the piece of Italian ead with olive oil. Rub the garlic
clove onto the ead.
For uschetta:
2 16-20-size shrimp, clean and sliced down the center
1 Tsp. flour
3 Tbsp. olive oil
1 minced garlic clove
4 ounces white wine
black pepper
salt
lemon juice
chopped parsley
paprika
chopped basil
DIRECTIONS
Combine shrimp with black pepper, salt, paprika, lemon juice and parsley and marinate for 30 minutes. In a sauce pan over low heat, add salt and oil. Add fl our and mix well to thicken. Sauté garlic with fl our mixture for one minute until it becomes soft and pink. Add shrimp and sauté together. Add white wine and a little bit of lemon juice and sauté until it becomes like a gravy.
Pour the shrimp mixture on top of the Italian ead.
