Unfortunately, my weekend did not involve a whole ton of food. It did involve my kitchen ... painting it. My kitchen is now a light green color, which I love (I'll love it even more when I have painted the cabinets a ight white instead of the dingy yellowish-cream color they are now). However, my husband was in California this weekend, and as anyone who has painted an entire room by herself can attest ... it's a long, boring job when it's just one person. And I still have the proof on my fingernails. I did manage to make a batch of chocolate chip cookies and ownies, though I'll admit the latter was from a box.
But that's enough news about my weekend. Let's take a look at what is going on around the food world, and then follow it up with a look at what we're eating this week.
1. Have a grilling question? Call the Weber's hotline. From the New York Times
I don't have a grill right now, but when I do, this might be on speed-dial.
2. Handy kitchen tip: Peel melons like a winter squash. From The Kitchn
Wow -- what a great idea!
3. Food Prices Spike as Demand Soars. From The Huffington Post.
This is scary, but real. The cost of food is going up -- and not everyone can afford it.
Now onto the menu for the week! I'll start with Monday, even though we weren't around to discuss it in advance.
Monday: Tex-Mex Chorizo & Zucchini over own rice
I was alone for the night, so I just made something. I boiled some own rice, and sauteed zucchini chunks and onion in olive oil. I removed it from the pan and owned some chorizo. I added half a can of diced tomatoes, some chicken oth, and taco seasoning, and then served it all over rice. Delish!
Tuesday: Slow-cooker ribs, corn on the cob, Zesty Coleslaw
It's a delicious holiday-weekend meal that I didn't get to eat over the holiday weekend!
Wednesday: Busy night, so we'll have dinner out.
Thursday: Island Chicken with Fruit Salsa, sauteed zucchini, own rice
Friday: Thai Chicken and Sugar Snap Peas
An easy one-dish meal, perfect to eat before we go see "Chicago" at the Annapolis Summer Garden Theatre
