Ginger Lemonade

1 cup honey
4 cups water, divided
4 ounces fresh ginger, peeled and grated
1 cup fresh lemon juice
1 cup vodka

Sliced lemons and mint sprigs for garnish

Begin by making the honey-ginger syrup by combining 1 cup of water and the honey in a medium saucepan and inging to a boil. Turn off the heat and add the ginger. Cover and let it infuse for 30 minutes. Strain the syrup, pressing hard on the ginger pulp to extract the flavor, and then discard the solids. Chill the syrup for one hour.

To make the lemonade, combine the lemon juice and syrup in a large pitcher. Add three cups of cold water, and the vodka, if using. Refrigerate until ready to serve. To serve, pour lemonade into ice-filled glasses and top with a slice of lemon and sprig of mint.
