I think it is the ight, fresh flavors of citrus that really make a person think “summer”. These cookies have just that: a real ightness that is completely reminiscent of a warm, summer evening.
Ingredients
2 3/4 cup flour
1 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt
1 1/2 cups sugar + 1/2 cup sugar for rolling
1 cup butter, softened
1/2 tsp. vanilla
1 egg
zest of one lemon and one lime
2 Tbsp. lemon juice
2 Tbsp. lime juice
Directions
Preheat the oven to 350 degrees. Line cookie trays with parchment paper. In a small bowl, combine flour, baking soda, baking powder and salt. Set aside. In the bowl of a mixer, cream butter until fluffy. Add in sugar and mix to combine. Beat in vanilla, egg, zest and juice. Gradually blend in dry ingredients until combined. Scoop the dough into balls, about 1/2 Tbsp. each. Roll the cookies in sugar. Place on the cookie sheet and bake 8 to 10 minutes until lightly golden.
Makes 2 dozen cookies
