Let’s really discuss dinner for a second, shall we? There’s always a main course and then typically two sides. And really, the sides play second fiddle to whatever the main item should be. However, sides really deserve their time in the spotlight. As sides go, potatoes are one not to be out-shined. These maple sweet potato stacks are an absolute winner. They are slightly sweet with just a hint of saltiness. A perfect accompaniment to whatever main course you choose. br
Ingredients
3 sweet potatoes, peeled and sliced into 1/4” thick slices
1/4 cup olive oil
1/4 cup pure maple syrup
salt
Directions
Preheat the oven to 375 degrees. Lay sweet potatoes in a single layer on a foil-lined baking sheet. Use a pastry ush and ush all the slices with olive oil. Repeat with the maple syrup. Sprinkle with salt. Bake for 40 to 50 minutes until tender. To serve, pule the potatoes on top of each other in stacks.
