I got married on Saturday, and the weeks leading up to the wedding were chaotic, to say the least (coupled with the fact that we moved into a new house a month ago, and you can see how home-cooked meals might take the back burner).
But, while sitting at the Phoenix airport yesterday, waiting for a (delayed) flight back to Maryland, I knew I really had to make an effort to focus on planning our meals, grocery shopping, and making those meals at home so we don't spend too much (money-wise or calorie-wise) on dining out so frequently.
So while today might be Tuesday, I did in fact plan this menu on a Monday...so it was still Menu Monday! Click on the links for recipes, and if you feel inspired, share your menus in the comments section.
Tuesday: Shrimp and Grits, Salad
Wednesday: Short Ribs in Tomato Sauce, roasted occoli
Thursday: Fish Tacos, Caribbean Pasta Salad (minus the shrimp)
Friday: Turkey meatloaf, mashed cauliflower, sauteed mushrooms
Saturday: We're attending a gala for the Children's Theatre of Annapolis!
Sunday morning eakfast: Huevos Rancheros, coffee
I have a goal to start making Sunday morning eakfast for my new husband and me. I always love going out to eakfast, but I think this would be a really nice tradition...perhaps I'll even renew my subscription to the Sunday New York Times or Washington Post.
