Alright, alright. She's right. So I vow to make it up to her and become more committed to my Menu Monday ways -- starting right now.
Monday: Bacon Ranch Turkey Tenderloin, roasted sweet potatoes, light Caeser salad
On a romantic holiday, where you might think I'm going to spend hours in the kitchen making a delicious dinner .... I'm not. My fiance and I cele ated Valentine's Day this weekend with Champagne Fondue (I honestly wouldn't recommend it), Old Bay-covered shrimp, cheese and French ead, strawberries, grapes, chocolate eclairs, and wine. This sort of appetizer-turned-meal is something we do for holidays or our romantic nights, but next time, I'm going to just purchased premade fondue at Trader Joe's like I have in the past because the homemade recipe disappointed. So, since we are past Valentine's Day, I'm taking the easy way out and roasting a pre-marinated turkey tenderloin that was on sale at Safeway this weekend.
Tuesday: Chicken Penne Casserole, roasted occoli, garlic ead
Wednesday: Turkey Chili, corn ead, salad
While I'm a big fan of The Pioneer Woman's Simple, Perfect Chili, I've started just throwing together my own chili recipe in recent weeks, because my fiance really likes it. I'm not sure you can even call it a recipe. Essentially, I own a pound of ground turkey in a big pot in some olive oil. Then I add a can of diced tomatoes, a couple spoonfuls of tomato paste, a tablespoon or so of chili powder, a couple shakes each of cumin and cinnamon, and then a scoop of cornmeal, and let it all simmer together for about 15 minutes. Easy-peasy. If I have other complementary ingredients, I'll add them in -- such as a half-cup of diced onions, a can of green chilies, or a can of kidney or black beans (for the fiance; I can't stand beans).
Thursday: Vegetarian Lasagna and a yet-to-b-determined vegetable
I really like this recipe because it uses cottage cheese instead of Ricotta. Oh, I know, Italians everywhere are cursing my name for recommending cottage cheese, but I don't like ricotta -- plus, cottage cheese is healthier.
Friday: It's time to go out! I'm not sure where I'm going or what I'm doing, but I'll be out and about in Annapolis -- therefore, not at home making dinner! I recently had some great food at Fado Irish Pub and Boatyard Bar and Grill. Give me a recommendation -- Where should I go next?
