Ingredients
2 cups flour
1/2 cup sugar
1 cup sweetened coconut flakes
2 eggs
1 1/2 cup milk
1 stick butter, melted
1 tsp. vanilla
2 tsp. lime zest
For glaze:
Juice of 1 lime
2 to 4 Tbsp. confectioner's sugar
Directions
Preheat oven to 350 degrees. In a large bowl, combine dry ingredients. In a separate bowl, combine wet ingredients. Pour the wet ingredients into the middle of the dry ingredients and stir until just combined. Pour batter into greased mini muffin tin. Bake for 15 to 20 minutes until the muffins bounce back when touched.
To prepare glaze, combine lime juice with 2 tablespoons confectioner's sugar. Mix well. If the mixture seems too thin, add more confectioner's sugar as you see fit. Drizzle over cooled muffins. Makes 24 muffins.
