I would like to file this under "Things that shouldn't exist." It can join the KFC Double-Down in the list of items that just kind of gross me out. Now, I bet there are bacon-lovers out there that are rejoicing this Denny's development. After all, the popularity of chocolate-covered bacon shows that the meat paired with a sweet component is clearly here to stay. But is this sundae REALLY necessary?
For the record, I have nothing against Denny's. In fact, I was a waitress at Denny's throughout college, so I kind of owe them a little bit. Some might say, "well, it's Denny's. What do you expect?" But I found out, it is possible to eat a decent meal at Denny's...order a grilled chicken sandwich with a side of fruit or cottage cheese, and you're good to go.
UPDATE: Our contributing arts editor, Elyse, just sent me something else that goes on the list of things that shouldn't exist: Red Velvet-Breaded Onion Rings. I can't handle this.
Alright ... rant over. As promised, I have a recipe for you -- a healthy recipe to counteract all the bacon shown above.
Tuscan-Style Tuna Salad
Scoop this into a wheat pita for a sandwich or pile it on some lettuce for a great salad topping.
2 cans water-packed tuna
2 tomatoes, cut into chunks
1 can chickpeas, drained and rinsed (or one can small white beans)
1 bunch green onions, sliced thinly
2 tablespoons extra-virgin olive oil
2 tablespoons freshly squeezed lemon juice
salt and pepper to taste
Mix all ingredients in a large bowl and refrigerate for 2 hours or overnight to let the flavors mingle.
