Buffalo Chicken Dip
This is my absolutely favorite recipe to make during a football game.
2 cups chicken, diced or shredded
2 packages cream cheese, softened
1 cup ranch dressing
3/4 cup wing sauce
1 1/2 cups shredded cheddar cheese
Mix the cream cheese, ranch dressing, and wing sauce, along with half the cheese. Fold in the chicken. Pour into a oven-safe dish and sprinkle the remaining cheese on top. Baked at 350 degrees until hot and bubbly. Serve with celery sticks and tortilla chips.
Pinwheels
2 packages cream cheese, softened
1-ounce package ranch dressing mix
2 green onions, minced
4 flour tortillas (12-inch)
1/2 red bell pepper, diced
1/2 cup diced celery
2-ounce can sliced black olives
1/2 cup shredded cheddar cheese
Mix the cream cheese, ranch dressing, and green onions in a medium bowl. Spread the mixture on each tortilla, and then sprinkle the red pepper, celery, black olive, and cheese over the tortilla. Roll up the tortilla tightly and wrap them in aluminum foil. Chill for at least two hours. Unwrap the rolls, and cut into one-inch slices.
Peanut Butter Brownies
1/2 cup peanut butter
1/3 cup butter, softened
2/3 cup sugar
1/2 cup packed brown sugar
2 eggs
1/2 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
Cream together the peanut butter and butter in a medium bowl. Add the sugars, eggs, and vanilla, and cream until fluffy. In a smaller bowl, mix the flour, baking powder, and salt. Blend into the peanut butter mixture. Pour into a greased 9x9 baking pan.
Bake for 30 to 35 minutes in a 350 degree oven or until the top springs back when touched.
