So if you're still looking for a new year's resolution (or want to replace the one you've already broken), commit to making a weekly (or bi-weekly, or monthly) menu plan. I resolve to sharing my menu plans with you more frequently, as it always helps to see what other people are making for the week to get inspiration.
Monday
Entree: Boneless Pork Ribs in Spicy Tomato Sauce
Side Dish: Roasted Brussels Sprouts with Bacon and Walnuts
Notes: If you're finding it hard to get dinner on the tomato, I'll extol the virtues of a slow-cooker one more time. It's really helpful to throw together a meal in the slow-cooker in the morning and have it nearly ready to go when you get home. Also, if you don't like Brussels sprouts, try roasting them. It will change your life (or at least your outlook on Brussel sprouts).
Tuesday
Entree: Clam Chowder (It's time to start knocking off the recipes on my 12 in 2012 list!)
Side Dish: Garden salad
Notes: Due to a current aversion to potatoes, I'm going to incorporate cauliflower into the recipe. This might be heresy, we'll see how it turns out.
Wednesday
Entree: Buffalo Chicken Meatballs
Side Dish: Mashed Cauliflower
Side Dish #2: Another vegetable, to be determined.
Notes: I have been salivating over these meatballs since I found this recipe last week. And because my husband and I *just* decided we're hosting a Super Bowl party this year, let's see if they're good enough to be served during the big game!
Thursday
Happy hour! We're visiting Yellowfin for their famous happy hour menu.
Friday
Entree: Grilled steak or sauteed Tilapia (Still up for debate!)
Side Dish: Roasted Garlic Mushrooms
Side Dish #2: Caesar Salad
