Ingredients
2 Tbsp. olive oil
2 thinly sliced red onions
1/4 cup sugar
1/4 cup balsamic vinegar
1/2 cup pomegranate juice
Directions
In a saucepan, heat oil over medium-low heat. Add onions and saute until they are softened, about 15 minutes. Mix in sugar and cook until sugar has dissolved. Slowly add in vinegar and juice. Increase the heat and ing the mixture to a boil. Reduce heat to simmering and cook until the liquid has evaporated and the onions are caramelized, 35 minutes. Stir frequently to avoid burning. Makes about 1 cup of jam.
