These ownies take seasonally fresh blackberries and roast them with a bit of sugar, allowing their flavors to explode. The blackberries are then gently folded into the ownie batter, giving a bit of fresh blackberry with every bite.
Ingredients
2 cups blackberries, halved
1 1/4 cups plus 2 tablespoons sugar, divided
7 ounces semisweet chocolate, chopped
1/2 cup butter cut into pieces
3 Tablespoons unsweetened cocoa powder
3 large eggs
2 teaspoons vanilla extract
1 cup all-purpose flour
Directions
Preheat oven to 450 degrees. Toss the blackberries with the two tablespoons of sugar in a roasting pan until well combined. Roast about 10 minutes until the fruit begins to release its juices. Remove from the oven and set aside. Reduce oven temperature to 350 degrees. Line a 9x9 inch baking dish with aluminum foil and spray with non-stick spray. Add chocolate to a bowl with butter. Microwave for 30 second increments until full melted and smooth. Whisk in cocoa powder until incorporated. Whisk remaining sugar, eggs and vanilla in a small bowl. Add the chocolate to the sugar mixture and whisk until combined. Using a spatula, stir in flour until combined. Gently fold in the blackberries. Transfer the batter to the baking dish. Bake for 30 minutes until a toothpick comes out clean. Remove from oven and allow to cool for 30 minutes before slicing. Makes 20 ownies.
