Lazy Devils
Rhea's Rundown
These Lazy Devils are my MVP pick for Super Bowl Sunday. They are the easiest deviled eggs you’ll ever make, with a convenient little cheat that leaves the egg yolks in the egg. Simply boil and peel the desired amount of eggs, peel, and slice them in half. Top the egg halves with a tasty dollop of Sriracha mayonnaise, a ribbon of prosciutto, and a sprinkling of chives and fancy salt. I use a fleur de sel from Season’s Vinegar and Olive Oil Taproom. They’re just as good, if not better than the typical deviled egg filling. Take 10 or so minutes and find out for yourself!
Ingredients – Makes 24
- 12 hard-boiled eggs
- ½ cup Sriracha mayonnaise
- 4 ounces thinly sliced prosciutto
- 2 tablespoons minced chives
- Fleur de sel
Directions
1. Cut the hard-boiled eggs in half lengthwise. Use a butter knife to smear a generous dab of Sriracha mayonnaise on the cut sides of the eggs, and arrange them on a platter.
2. Tear the prosciutto into ribbons, and use them to garnish the tops of each half-egg. Sprinkle the minced chives over the devils, and season each with a bit of the salt immediately before serving.
