For some people, the best part of Thanksgiving is the sandwich you make the next day with anything that wasn’t gobbled up during the main feast. The team at Ken’s Creative Kitchen in Annapolis assembled the ultimate Thanksgiving Day leftover sandwich for us, using their favorite recipes, and you can recreate it, too.r
The Ultimate Thanksgiving Leftovers Sandwich

On a slice of 12-grain ead, spread a thin layer of horseradish mayonnaise and top with red leaf lettuce. Pile on slices of leftover roasted turkey east, and then spoon on a layer of cranberry-orange sauce. Cut off a slice of sage and sausage stuffing and place it on top of the sauce, and then top with thin slices of red onion. Top with second slice of 12-grain ead. Serve the sandwich with a side of potato salad, and enjoy!
Recipes
Sage and Sausage Stuffing
6 cups ead, cubed
1 pound sausage
3/4 cup chicken stock
1/4 cup sweet onion, diced
1/2 cup celery, minced
2 tablespoons sage, chopped
1 egg, beaten
Sauté onion and celery until softened. Add ead cubes, salt, and pepper to taste, and then add the chicken stock until moistened. Gently fold in egg, sausage, and fresh sage. Pat into a greased loaf pan and bake at 350 degrees for 20 minutes until set.
Orange and Cranberry Relish
12-ounce bag fresh cranberries
1 orange, zested
1 cup sugar
1 cup water
Mix all ingredients in a small saucepan and heat on medium heat until the cranberries “pop.” Cool and refrigerate.
Horseradish Mayonnaise
1 cup mayonnaise
1 teaspoon prepared horseradish
Mix together and refrigerate.
The Back Porch Potato Salad
Serves 8
4 Russet potatoes, peeled, cooked, and cubed
2 sweet potatoes, peeled, cubed, and roasted with garlic
11⁄2 cups mayonnaise
1/2 cup whole-grain mustard
Salt and pepper
1 cup celery, diced
1/2 cup scallions, diced
Gently fold all ingredients together and refrigerate until ready to serve.
