In a pinch, the urge to grab take-out can be a little overwhelming. It's easy and fast, right? But so are these burrito bowls. You'll have them finished before you could even order take-out grub.
Ingredients
2 cups cooked own rice (for the sake of time, feel free to use the boil in a bag. It's a nice, quick shortcut)
1 Tbsp. olive oil
1 small onion, chopped
1 green pepper, chopped
1 can black beans, drained and rinsed
1 1/2 tsp. chili powder
1 1/2 tsp. garlic powder
1 tsp. salt
2 Tbsp. tomato paste
cheddar cheese, avocado, sour cream or Greek yogurt for topping
Directions
Heat olive oil in a large sauce pan over medium heat. Add in onions and pepper and cook about five minutes until just soft. Add in the black beans and stir well to combine. Add the chili powder, garlic powder and salt to the pan and mix well. Pour the rice into the pan and stir well, making sure the rice is completely incorporated. Add the tomato paste and stir well to completely combine. Spoon the mixture into bowls and top with cheddar cheese, avocado and sour cream or Greek yogurt.
