Nothing says summer like a backyard BBQ with corn on the grill. Corn is back to celebrate the season! We don't need to get into the long debate about whether corn is a starch or a vegetable, eat it while you can! Technically, corn is a starchy vegetable, it just has a lot of sugar and carbs in it for people to feel like they are eating a vegetable.
- Corn is a whole-grain product and can promote gut health and lower your chances of diabetes, cancer, and heart disease. This is better than those starches that contain processed white flour.
- Corn is filled with fiber, which means, you will stay full longer after a ear or two or corn than you will on a white flour based starches.
- Corn is rich with Vitamin B12, this combination of folic acid and iron helps production of red blood cells in the body, helping reduce the risk of anaemia.
- Corns complex carbohydrates digest at a slower pace which gives you energy for a longer duration of time.

Southwestern Sauteed Corn (Tasteofhome.com)
- 1 tablespoon Butter
- 3 1/3 cups fresh corn or 1 package (16 ounces) frozen corn
- 1 plum Tomato, chopped
- 1 tablespoon Lime juice
- 1/2 teaspoon Salt
- 1/2 teaspoon ground Cumin
- 1/3 cup minced fresh Cilantro
- In a large cast-iron or other heavy skillet, heat butter over medium-high heat. Add corn; cook and stir until tender, 3-5 minutes. Reduce heat to medium-low; stir in tomato, lime juice, salt and cumin. Cook until heated through, 3-4 minutes. Remove from heat; stir in cilantro.
Mexican Street Corn (Letsdishrecipes.com)
- 6 ears fresh Corn
- Vegetable Oil
- 2-3 tablespoons mayonnaise
- 2-3 tablespoons Sour Cream
- 1 tablespoon Lime juice
- 1 teaspoon Chili Powder
- Dash of Cayenne Pepper
- Salt and Pepper to taste
- 1/4 cup crumbled Queso Fresco
- 1/4 cup chopped fresh Cilantro
- Preheat grill for high heat. Brush corn with vegetable oil. Grill corn, turning every 2-3 minutes, until slightly charred on all sides. Cool and cut corn kernels off cob.
- In a medium bowl, combine corn kernels, mayonnaise, sour cream, lime juice, chili powder and cayenne. Garnish with queso fresco and chopped cilantro.
Grilled Corn with Garlic and Parmesan Cheese (Eatwell101.com)
- 1 pound fresh or frozen Corn Kernels
- 1/4 cup Butter
- 4 medium Cloves Garlic
- 2 tablespoons Worcestershire Sauce
- 1/4 cup grated Parmesan Cheese
- Salt and Pepper
- Fresh Chopped Parsley
To make the grilled corn: Melt butter in a saucepan over medium heat. Add garlic and cook until soft and fragrant, 30 seconds to 1 minute — be careful not to burn the garlic. Remove the mixture from heat. Add Worcestershire sauce and stir the mixture gently.
In a skillet, melt 1/2 tablespoon butter and cook corn for about 2 minutes over medium-high heat, stirring occasionally. Stir in the butter mixture and continue cooking until corn is cooked and slightly charred, about 8 minutes.
Remove from heat. Sprinkle corn with grated Parmesan cheese and parsley, serve the grilled corn immediately or chilled. Enjoy!
