Meatloaf is not one of the more attractive meals. Sometimes, however, the hankering for something classic and comforting crops up. This meatloaf uses egg whites as a binder and tops off with a own sugar BBQ glaze, all for under 500 calories.
Ingredients
1 lb. lean ground beef
1 cup eadcrumbs
1/2 cup ketchup
1/2 cup barbecue sauce
2 egg whites
1/2 tsp salt
1/2 tsp pepper
1/2 tsp. garlic powder
For glaze:
1/2 cup ketchup
1/2 cup barbecue sauce
1 Tbsp. own sugar
3 tsp. Worcestershire sauce
Directions
Preheat oven to 400 degrees. Line a baking sheet with foil and spray with non-stick spray. In a large bowl, combine beef, eadcrumbs, ketchup, barbecue sauce, egg whites, salt, pepper and garlic powder. Using your hands, combine all the ingredients until they fully incorporate. Take the meat mixture and place it on the baking sheet. Form it into a long, oval log. To make the glaze, combine all the ingredients in a bowl until fully incorporated. Spread the glaze over the entire meatloaf. Place in the oven and cook for 40 minutes until cooked through. Let rest for five minutes before slicing into servings.
Serves 8
Each serving of meatloaf is approximately 270 calories for a slice, including glaze. Serve with steamed or roasted carrots.
