It might be National Margarita Day, but it's also a Wednesday. As in, a school night. So I'm not likely to go out and partake in one-too-many margaritas.
Because, as we all know, it always turns into one-too-many margaritas.
Instead, here's a recipe for Tequila Lime Salmon, which could really be called Margarita Salmon and none of you would be the wiser.
Tequila Lime Salmon Margarita Salmon
Serves 4
r1 pound Atlantic salmon
2/3 cup silver tequila
1/3 cup olive oil
1/3 cup lime juice
1 jalapeno, ribs and seeds removed, chopped
3 cloves garlic, chopped
Combine all the ingredients in a large container, making sure the salmon is thoroughly coated. Cover, place in the fridge, and let marinate at least 30 minutes.
rPreheat the oven to 375 degrees. Place the salmon on a foil-lined baking sheet, scoop up all the jalapeno and garlic pieces from the marinade, and scatter it over the fish. Bake for 20-25 minutes, or until the fish flakes easily.
