However, I've lately been shopping after work on Fridays, so my menu plans have been from Friday to Thursday. This makes weekend meals more planned, which is a good thing -- both for my sanity and my budget.
Friday: There's no real recipe -- I'm going to make an easy blend of whole wheat pasta, farm-fresh tomatoes, mozzarella cheese, and basil. I might throw in some bacon for a little extra flavor, but who knows if it will really need it?
Saturday: Oven-Fried Chicken, Baked Sweet Potato Fries, Corn Casserole
Sunday: Saucy Garlic Chicken over whole wheat pasta

Monday: Margarita Fish Tacos, Mexican Rice, sauteed zucchini

Tuesday: White Chicken Chile, homemade wheat rolls
Wednesday: Pizza!
Thursday: I'm going to head to the Farmers Market on Taylor Avenue on Thursday and see what's available. I'm thinking, though, that we'll have some sort of marinated steak with fresh salsa and fresh veggies, perhaps a roasted corn salad.
