Ingredients
1 tsp. olive oil
1/2 small yellow onion, diced
1/4 each red and green bell pepper, diced
1 ear of corn, sliced off the cob
4 ounces cream cheese
1/4 tsp. chili powder
1/2 tsp. smoked paprika
6 corn tortillas
Directions
Preheat oven to 375 degrees. Heat oil in a sauce pan over medium high heat. Add in onions and peppers and saute until softened, about 2 minutes. Add in corn and spices and saute for 1 minute. Add in the cream cheese and stir until melted. Heat corn tortillas, one at a time, in the microwave so they are pliable. Place 2 heaping teaspoons of filling in the center of each tortilla. Roll them tightly and place them, seam down, on a baking sheet. Bake for 10 minutes until crisp. Serves 6.
