But that means it's a day to make comfort foods...the ones we might not make during a healthier, easier day of the week. To me, this could mean macaroni and cheese, beef stew, or something else steaming hot or creamy. Today, I chose to go with a corn casserole (to pair with chicken and roasted asparagus, which is on sale as Safeway right now!) I talked about this casserole around Thanksgiving. I might have even given the recipe for it before. However, if that's the case, it might have been lost in our recent transition to a new website. Therefore, I'm going to share it with you again!
Corn Casserole
1 can whole kernel yellow corn
1 can cream-style yellow corn
8 ounces sour cream
2 eggs, beaten
1 box Jiffy corn muffin mix
1 stick butter, melted (I did not say this recipe was healthy)
Mix together all the ingredients and pour into a lightly oiled casserole dish. Bake at 350 degrees for an hour.
Trust me, you won't regret making this recipe. It's a fantastic side dish!
